Breast of Chicken with Smokey Bean Cassoulet, Cherry Aioli and Snow Peas

INGREDIENTS:

FOR THE CASSOULET;

Place dried beans in 5 times the amount of water Boil for 3 hours or until tender, - Drain

 

Peel and chop carrots and onions, dice speck. Sweet ingredients, then add glaze.

Blanch and julienne snow peas.

Mince garlic and add to mayonnaise.

Sear chicken and finish in oven.

Heat the glaze and add the beans til warmed and coated.

Pile in the middle of the plate, slice the chicken in half, place the sliced beans then the chicken. Finish with Aioli.
