Thai Fish Cakes

Ingredients:

2 large snapper fillets
2 tablespoon red curry paste
1 tablespoon white sugar
1 tablespoon fish sauce
100 gr snake beans, chopped very finely
2 kaffir lime leaves
50 gr basil leaves (thai)
1 egg
vegetable oil


Sauce:

Sweet chilli sauce
A little water
Chopped peanuts
Chopped cucumber
Coriander


Instructions:


Mince snapper with knives, chop bail, slice kaffir.
Mix all ingredients together.
Heat oil.
Make round balls, then flatten to a pattie shape.
Fry in oil until cooked.
Serve with sweet chilli sauce.
