The reason for salting sliced eggplant is to remove liquid from the slices so that they won't absorb too much oil, so, if you are grilling eggplant on a barbeque or under a grill, there is no need for salt, just a brush of olive oil. Pat the slices of salted eggplant with paper towel, don't rinse them.

I am still reeling from the heady foods I ate when I travelled in Southern Spain. In all the bars wine, beer and sherry was accompanied by small plates of exquisite food.  Inspired by my photographs, I will take you to revisit the best bars of beautiful Spain.

Pasta, Gnocchi and Breads (practical)

First we'll get some bread to prove and bake, then learn to make from scratch tagliatelle, ravioli, gnocchi.  Finally, we'll eat the results with some fine wines. What a day! Please bring flat trays or boxes and 5 clean teatowels to take home your treasures.

Meet at the Central Market and shop for our 'catch'. Then back to Union Street to learn a variety of techniques for each of our glistening fish.

How to Survive your Own Cooking (practical)

With my guidance, you will progress from knife skills, through meat cookery, vegetable dishes, baking and timing.  In addition, you will leave with an excellent booklet of fail safe recipes.

Croquembouche! (practical)

Special Guest Chef: Carmen Vining

Learn the basics of making profiteroles, flavoured custard fillings and toffee. Then assemble and take home a small croquembouche, recipe booklet and the skill to reproduce it for a special party.

Market Tour and Street Food Class (tour and practical) 
Saturday, May 19th, 8.00am-3.00pm/ $120

For this class we will begin at Lucia's in the Central Market then explore together the notion of street food.
Whenever and wherever I travel I notice that the longest queues are often at street stalls. Here the discriminating locals have a mid morning snack of rice cakes in Florence, pastizzi in Malta, croquetas de bacalao in Spain or pakoras in India, prawns on sugar cane in Vietnam and curry puffs in Malaysia. In Turkey, Greece, the Middle East the locals whet their appetites for the late evening meal with grilled salty cheese, kebabs or simple roasted nuts and seeds. I haven’t been everywhere (yet!) but everywhere I’ve been, I’ve eaten well and so will you.

Lebanese Banquet (practical)

The foods of Lebanon are ancient and well travelled, we see influences throughout the Mediterranean and Middle East.  It is a cuisine characterized by healthy ingredients, abundant herbs and rich flavours matched by a sense of genuine and warm hospitality.

The island of Sicily is a sun-drenched jewel whose position in the Mediterranean has seen it play unwilling host to many cultures of remarkable brilliance. This history and the exotic ingredients of the island - capers, raisins, saffron, citrus and rice - have combined into a rich and heavenly cuisine.

Please read this information carefully before booking...

Classes, both demonstration and practical are small and focussed only on learning, there is no shopping to distract us from our main purpose!

When practical classes are offered, we ask that participants bring an apron and if possible a chef's knife and a paring knife.

There are important occupational health and safety rules that must be followed when participating in a practical class. These are non-negotiable.

These include:

  • Closed, non-slip shoes must be worn
  • No jewellry to be worn, this includes wedding bands, watches and earings which do not have clasps.
  • Hair must be tied back or under a hat.
  • No alcohol can be served while preparations are taking place.

Please ring Rosa on 08 8373 6106 for bookings. Bookings can be accepted only with payment by cheque, money order, credit card or cash.

Refunds are given only with 2 days' notice. Credits or transfers are accommodated with 24 hours' notice except for special interest courses. Where a class has to be cancelled or postponed as much notice as possible is given. You will then have the option of a credit, transfer or a full refund.
